The degree programme facilities comprise various structures and areas that help you to carry out your learning activities, supporting you in your studies and professional and cultural research.
The classrooms and laboratories support the 2nd year of the "Risk Management" curriculum which takes place at the Alma Mater Studiorum - University of Bologna - Department of Agricoltural and Food Sciences - viale Giuseppe Fanin, 40-50, Bologna.
The degree programme provides two study rooms available for your use.
The rooms are open from Monday to Friday from 8.30 am to 7 pm.

EDUCATIONAL ACTIVITIES
The main didactic activities carried out concern exercises related to:
- soil chemical analyses, for example, degree of reaction, soil texture, total limestone content, cation exchange capacity, organic matter content, extraction and purification of humic substances, inorganic nitrogen, assimilable phosphorus, and exchangeable metals;
- soil biochemical analyses, for example, determination of microbial biomass, soil basal respiration, and soil enzymatic activities;
- the study of the acid-base properties of biomolecules, of enzymatic kinetics, of biomolecules' interaction with heavy metals and phenolic compounds;
- the study of the adsorption isotherms of contaminants in the soil;
INSTRUMENTATION AVAILABLE
The laboratory is equipped with 12 workstations and two fume hoods.
Particular instrumentation: UV-Vis spectrophotometer (Jasco), digital pH-meter (pH700), digital conductivity-meter (CON 700), Portable digital infrared thermometer analytical (ScanTemp 440), digital precision balance (KERN 572-32).

The lab is located in Viale G. Fanin 44-46 (1° floor) Bologna, and is available for all Bachelor and Master courses located in Bologna.

TEACHING ACTIVITIES
The main teaching activities are related to:
- histological analyzes for courses in botany, mycology, entomology, microbiology, biotechnology, chemistry. In particular histological analysis of plant structures, soil, water, lactic acid bacteria, molds and yeasts, mycorrhizae, main non-pathogenic bacteria gram + and -;
- biotechnological procedures, such as PCR and DNA extractions from samples of leaves, soils, fungi, bacteria;
- spectrophotometric analysis;
-preparation of culture media and work in sterility in a laminar flow hood;
- cell cultures and inoculations of different samples;
-animal parasitology (analysis of main pathogens of domestic animals);
- analytical determinations relating to the quality of oils, wines, beers and vinegars.
AVAILABLE INSTRUMENTS
The laboratory is equipped with 50 workstations; a biohazard laminar flow hood; a UV-vis spectrophotometer; an incubator at different T°C, a bench autoclave, a water bath, a PCR, a LED electrophoresis, a waste water analysis system, a microwave, 12 Vortex, a heating magnetic stirrer, 15 Bunsen, 2 scales, 20 automatic pipettes, micropipettes 5-20-200-1000 (12 of each type), a pH meter, a conductivity meter, a benchtop centrifuge with adapter for microtubes, an incubator, a turbidimeter, an analytical balance, a technical balance. Moreover 25 optical microscopes, 25 phase contrast microscopes, 25 stereo microscopes, a teaching microscope including camera and photographic system, an Epson 10x enlarger for projecting images, a projector with interactive whiteboard with camera for teaching, which can also be used remotely.

The teaching laboratory (Viale G. Fanin 50, Bologna) is a reference point for the bachelor and master's degree courses of DISTAL which deal with the production and the quality of livestock products, as well as their transformation.

TEACHING ACTIVITIES
The main teaching activities carried out are related to:
- fresh milk processing, surfacing, pasteurization, rennet coagulation, curd collection, purging and subsequent salting treatments (brine or dry) for the production of both fresh and short-aged products;
- heat treatment of whey, cottage cheese production;
- production of cooked and short-aged cured meats;
- approach to hygienic-sanitary control of the production of fresh and aged cheeses, based on the analysis of the "hazard" and on the control of the "critical points" of the production process.

PRESENT INSTRUMENTS:
The laboratory has the following equipments for cheese making:
- five miniaturized fixed boilers with a capacity of 25 liters and heated through a cavity with steam circulation, produced by a special generator. The boilers are built in partially tinned copper, while the frame is built in stainless steel. In addition, a 22 liters stainless steel mobile boiler with steam injection is available;
- two cooler tanks with a capacity of 150 liters. The cooling of each one is ensured by a refrigeration unit; mixing of the milk is ensured by a rotating blade;
- two flat tanks, with a capacity of about 20 liters, for the surfacing of the milk;
- a stainless steel curd unloading box for collecting and placing the cheeses in molds equipped with a special perforated surface for dividing the curd into the individual molds.
- a multi-purpose boiler with a capacity of 50 liters which features a digitized system with production cycles that can be controlled in person or remotely for the production of yoghurt, panna cotta, pasteurized raw, semi-cooked and cooked cheeses.
The laboratory has the following equipment for meat salami production:
- meat mincer, dough mixer and bagging machine for the production of short-seasoned raw and cooked cured meats.
